Pineapple AuGratin

From my friend Pamela Johns - a wonderful friend and cook

bullet2 large (20 oz) cans of pineapple chunks drained
bullet2 C grated cheddar cheese
bullet1 C sugar
bullet6T self rising flour
bullet1 C crushed ritz crackers
bullet1 stick butter melted

Mix 1st four ingredients.  Pour into 2 quart baking dish.  Spread crackers on top and drizzle with butter.  Bake at 350 degrees for 30 minutes.
   

Oreo Balls

From Rob Coyle - friend, co-worker, employee, world traveler, and all around good guy

bullet1 package Oreo cookies
bullet1 8-oz package cream cheese at room temperature (this is important for ease of mixing!)
bullet1 package wafer chocolates - white or milk chocolate will work  (Can get from Michaels or AC Moores)

 

Crumb the oreos in a blender or food processor. Mix cookie crumbs and cream cheese together until well blended. Make into small balls. Can roll them easily in your hands. Put in refrigerator to chill.

Follow directions on the chocolates for melting in the microwave. Dip each ball in the chocolate. Put in fridge again until chocolate hardens.  Enjoy!

(Final count depends on ball size!)
